Campfire Recipe “Cilantro-Lime Shrimp Foil Packs” – Who said you can’t cook great gourmet food while camping?

Here is a story: "One of the things that initially put my partner off of camping was having to eat barbecue food that is made up of either seared meat or burger buns and other carbohydrates morning, noon, and night. And let’s be honest there are only so many drive-thrus you can visit and patties you can swallow before the whole camping experience becomes tedious and you really feel to urge to travel back home, sit down and enjoy a nourishing home cooked meal. Even my 10-year-old son, who would usually prefer to starve before letting a vegetable touch his lips guzzling down the carrots and broccoli on his plate, barely stopped to breathe air the last time we came back from a camping trip."

In order to make camping a more exciting and more nutritious time for everyone, I decided to start looking for tasty recipes that could be made on a campfire or a grill. Now I know that you can probably make any recipe on a campfire if you really put your mind to it, but I wanted to find a meal that was not only super scrumptious but also something that would not require too much preparation or involve too many ingredients that are tricky to store when camping. That is where I stumbled across this cilantro-lime shrimp recipe.


This recipe is especially tasty because of the mix of flavors. It involves a combination of the sharp, zestiness of a lime, along with the hot and spiciness of chili flakes, the warming feeling of crushed garlic and cumin, combined with the chewy tasty goodness of well-prepared shrimp. All of these different tastes and textures bundled together make for a fusion of flavors that is only heightened by the authentic smokey taste of cooking on the grill.

  • 1 pound of medium shrimp (make sure you buy them peeled and deveined as there’s nothing fun about trying to peel and devein shrimp while camping)
  • 4 ears of corn (chopped into bite size pieces)
  • 1 medium zucchini (chopped into slices about half an inch thick)
  • 2 cloves of garlic (crushed) or 2 tablespoons of garlic powder
  • 2 tsp of ground cumin
  • 1 tsp of chili flakes
  • 3 tbsp of fresh cilantro (chopped)
  • A dash of extra virgin olive oil
  • Sea salt
  • A dash of black pepper
  • The zest of 2 small limes


Making fun but nutritious meals when camping is really important. In order to make this meal easier to prepare when you are knee-deep in the great outdoors, why not buy pre-peeled and deveined shrimp, and chopping your ears of corn and zucchini before you leave the house so that all of the ingredients are ready to be thrown straight onto the grill

  1. In a medium sized bowl mix together the shrimp, bite size ears of corn, chopped zucchini, crushed garlic, cumin, chili flakes, fresh cilantro, sea salt, and pepper and drizzle with olive oil, stirring until well combined.
  2. Tear off sheets of tin foil, drizzle with more olive oil and wet with lime zest, then spoon the shrimp mixture onto the sheets and fold them over to seal. Repeat until all of the shrimp mixture has been sealed with tin foil.
  3. Heat the grill to medium high and then grill the shrimp until pink, roughly 8 to 12 minutes.
  4. Serve with a drizzle of lime zest to accompany.

What I love about this meal is that it is so simple. One would never think that shrimp could be eaten while camping, but it is so easy to make, and if you do the preparation at home you won’t even need to bring your chopping board! Another great plus with this recipe is the cooking time. 

When the kids are hungry and you have got a full itinerary planned for the afternoon, the last thing you want to do is start waiting for a whole chicken or massive cuts of pork to cook on the grill. After all of the preparation, this recipe will only take a mere 8-12 minutes to cook, meaning that you can have this campfire classic plated up at record speed.

  • New potatoes: Boil some new potatoes skin-on and then crush them with your fork and drizzle them with some extra virgin olive oil to make the perfect accompaniment to your shrimp.

This recipe is super versatile, not only will the flavors reach their all-time maximum when cooked on a grill or open fire, but this recipe is also great for cooking in the comfort of your kitchen at home. After making this recipe once for the kids while camping it was so lip-smackingly good that only a mere two weeks after our camping trip I was down at the supermarket buying another 500g of shrimp to make the meal again at home.

In order to create this cilantro-lime shrimp foil pack recipe at home, preheat your oven to 400 degrees Fahrenheit then follow steps 1 and 2 mentioned above. Instead of putting your shrimp foil packs onto the grill, slide them into the oven and cook them at 400 degrees Fahrenheit (or 180 degrees Celsius in a fan oven) for 6 to 8 minutes or until the shrimp is pink. Then carefully remove the packages from the oven and transfer the contents onto plates and serve with a drizzle of lime.

Do you like your food a little spicier? Once you have made this cilantro-lime shrimp foil pack recipe once, try adjusting the quantity of spices to make it just as you like it. If you like a little extra kick in your food, try adding an extra teaspoon or two of chili flakes to the recipe or substitute the chili flakes for cayenne pepper for an extra smokey, fiery taste.

If you would like to tone down the spice a little bit then you can try halving the garlic and removing the chili flakes from the ingredients all together. Try adding a couple drops more lime zest to each parcel before grilling to mellow the spicy flavor.
